Características de la leche de vicuña (Mammalia, Camelidae)

Se presentan los resultados sobre la composición de la leche de vicuñas, con especial referencia a sus proteínas. Las muestras fueron obtenidas del rebaño perteneciente al INTA–Abrapampa (Jujuy, Argentina). Los valores encontrados fueron los siguientes: proteínas totales: 3.70 ± 0.98 g%; caseínas: 3.17 ± 0.87 g%; proteínas del lactosuero: 0.53 ± 0.17 g%; lípidos: 4.58 ± 1.35 g%; glúcidos: 7.43 ± 0.75 g%; calcio 0.128 ± 0.022 g%; pH: 7.022 ± 0.141. Mediante electroforesis en geles de poliacrilamida en presencia de SDS e immunoblotting se evidencia la presencia de tres bandas mayores de caseínas y trece bandas menores, de distinto peso molecular; asimismo las corridas electroforéticas mostraron que las dos proteínas del lactosuero (PLS) más importantes son la α-lactalbúmina y la seroalbúmina. También se detectaron 17 bandas menores de proteínas en el lactosuero. No se detectó la presencia de β-lactoglobulina por los procedimientos empleados.


Characteristics of vicugna’s (Mammalia, Camelidae) milk. The aim of this work is to know the general characteristics of vicugna milk with special reference to lactic proteins, their types and concentration. Milk samples were obtained from INTA–Abrapampa vicugnas’ breed. Glucids, proteins, lipids, calcium and pH were determined according cited methods. Proteins analyses were carried out through SDS polyacrylamide gel electrophoresis, scanning of the gels and immunoblotting. Results about gross composition showed the following: total proteins 3.70 ± 0.98 g%; caseins 3.17 ± 0.87 g%; lactoserum proteins 0.53 ± 0.17 g%; lipids 4.58 ± 1.35 g%; glucids 7.43 ± 0.75g%; calcium 0.128 ± 0.022 g%; pH 7.022 ± 0.141. PAGE–SDS showed three major and thirteen minor casein bands. Likewise, lactoserum proteins evidenced through this method 19 bands, two of which, serumalbumin and α-lactalbumin, were the most notorious. No β-lactoglubulin was detected in vicugna milk. The latest proteins were analyzed by western-blotting.
